Shift buttons act in a momentary way, when releasing a shift button it will revert back to what ever mode you were on before pressing it.
Mode activation buttons simply activate a mode.

"I just want one button to toggle through modes, is that possible?"
Not yet but very soon. Would you be looking to use one button, two buttons (up and down) or an encoder?
Oh thanks, I didn't notice that tutorial there. I was thinking one button, but an infinite page up/down with two buttons might be even better. I noticed there are 16 modes now so I'm sure some people would like an encoder. I personally will probably be using only 2-4 modes.

If using two buttons or an encoder, would an infinite loop be better than automatically stopping at the first and last modes?

That would be my personal preference yes.
